Ingredients

Scale
  • 2 pounds (about 900g) chicken wing sections (party wings), patted very dry
  • 1/4 cup (30g) cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/3 cup (110g) honey
  • 3 tablespoons (45ml) low-sodium soy sauce
  • 2 tablespoons (30ml) sriracha
  • 4 cloves fresh garlic, minced
  • 2 tablespoons (28g) unsalted butter
  • 1 tablespoon (15ml) rice vinegar
  • 1 tablespoon sesame seeds (for garnish, optional)
  • 23 sliced green onions (for garnish, optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Place a wire rack inside a rimmed baking sheet and set aside.
  2. Pat the chicken wings completely dry with paper towels. This is the most important step for crispy wings.
  3. In a large mixing bowl, combine the cornstarch, garlic powder, salt, and black pepper. Whisk together.
  4. Add the dried wings to the bowl and toss thoroughly with the cornstarch mixture using your hands. Make sure every piece is evenly coated. Shake off any excess before placing on the wire rack.
  5. Arrange the wings in a single layer on the wire rack, making sure they don’t touch each other.
  6. Bake for 20-25 minutes, flipping the wings halfway through with tongs. The wings should be deep golden brown and the skin should look dry and crackly.
  7. While the wings bake, make the glaze. In a small saucepan over medium heat, combine the honey, soy sauce, sriracha, minced garlic, and rice vinegar. Whisk together and bring to a gentle simmer. Let it bubble for 3-4 minutes, whisking occasionally, until it thickens slightly.
  8. Remove the glaze from the heat and whisk in the unsalted butter until fully melted and glossy. Taste and adjust seasoning.
  9. Transfer the baked wings to a large clean bowl. Pour the warm glaze over the top and toss vigorously with tongs until every wing is evenly coated.
  10. Transfer the glazed wings to a serving platter. Sprinkle with sesame seeds and sliced green onions. Serve immediately.

Notes

Don’t skip drying the wings thoroughly. Use a wire rack for 360-degree crunch. Don’t over-sauce; use just enough to coat each piece lightly. Work quickly when glazing—the wings are hottest right out of the oven. Serve immediately for maximum crunch. Leftovers can be stored in the refrigerator for up to 3 days; reheat in the oven or air fryer at 375°F for 5-7 minutes.
