A quick and easy recipe combining crispy smashed burger patties, melty cheddar and Monterey Jack cheeses, and a tangy special sauce, all layered between golden, crispy tortillas for a handheld comfort food delight.

Ingredients

Scale
  • 1 pound (450g) ground beef (80/20 blend recommended)
  • Salt and freshly ground black pepper, to taste
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder (optional)
  • 4 large flour tortillas (8-inch size)
  • 1 ½ cups (150g) shredded cheddar cheese (sharp or mild blend)
  • ½ cup (50g) shredded Monterey Jack cheese
  • 2 tablespoons butter (for crisping)
  • ⅓ cup (80ml) mayonnaise
  • 2 tablespoons ketchup
  • 1 teaspoon Dijon mustard
  • 1 tablespoon pickle relish
  • ½ teaspoon Worcestershire sauce
  • ¼ teaspoon smoked paprika
  • A few dashes hot sauce (optional)

Instructions

  1. Prepare the Special Sauce: In a small bowl, whisk together mayonnaise, ketchup, Dijon mustard, pickle relish, Worcestershire sauce, smoked paprika, and hot sauce (if using). Taste and adjust seasoning if needed. Set aside to let flavors meld while you cook. (5 minutes)
  2. Form and Season the Beef: Place the ground beef in a mixing bowl. Add salt, black pepper, garlic powder, and onion powder. Mix gently—don’t overwork the meat to keep it tender. Divide into 4 equal portions. (3 minutes)
  3. Cook and Smash the Patties: Heat your skillet over medium-high heat and melt a teaspoon of butter or oil. Place one portion of beef in the skillet and immediately smash it thin using a spatula, pressing firmly to create a wide, flat patty about the size of your tortilla. Cook for 2-3 minutes until the edges are crispy and browned. Flip carefully and cook the other side for another 1-2 minutes. Remove to a plate and repeat with remaining portions. (15 minutes total)
  4. Assemble the Quesadillas: Lower the heat to medium. Place one tortilla in the skillet, sprinkle half the cheese evenly over it, then layer with a smashed patty. Drizzle some special sauce over the meat, then top with remaining cheese. Place another tortilla on top and press down gently with the spatula. Add a small pat of butter around the edges for extra crispiness. (3 minutes)
  5. Cook the Quesadillas: Cook for 3-4 minutes on the first side until golden brown and crispy. Carefully flip using the spatula, pressing down gently again, and cook for another 3-4 minutes until the cheese is melted and the second side is crispy. Remove from pan and let rest for a minute before slicing into wedges. Repeat for the second quesadilla. (8 minutes)

Notes

Use 80/20 ground beef for juicy patties. Butter on tortillas before cooking adds flavor and crispiness. Press patties firmly for a crispy crust. If cheese melts slowly, cover skillet briefly. For gluten-free, swap flour tortillas for corn or gluten-free wraps. Sauce flavors meld better if made ahead. Avoid overfilling quesadillas to prevent tearing.
