  • 6 large russet potatoes (about 810 ounces each)
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 1 ½ cups sharp cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 8 slices thick-cut bacon, cooked and crumbled
  • 4 green onions, thinly sliced
  • ½ cup sour cream (for serving)
  • Pickled jalapeños (optional)
  • Chopped fresh chives (optional)
  • Hot sauce (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Scrub potatoes, prick with a fork, rub with 1 tablespoon olive oil and a pinch of salt. Bake for 50-60 minutes until tender. Let cool 10-15 minutes.
  2. Cut potatoes in half lengthwise. Scoop out flesh, leaving ¼-inch shell. Mix remaining 2 tablespoons olive oil, salt, pepper, garlic powder, and smoked paprika. Brush mixture inside and outside of each skin.
  3. Place skins cut-side up on a wire rack over a baking sheet. Bake at 400°F for 15 minutes. Flip and bake another 10 minutes.
  4. Flip skins back to cut-side up. Fill with cheddar and Monterey Jack cheese. Sprinkle crumbled bacon on top. Bake 8-10 minutes until cheese is melted and bubbly.
  5. Switch oven to broil (high heat). Broil 1-2 minutes until cheese is golden brown. Watch carefully to avoid burning.
  6. Let rest 2 minutes. Transfer to platter, sprinkle with green onions, and serve with sour cream. Add optional jalapeños or hot sauce if desired.

Notes

For best results, use a wire rack to ensure even crispiness. Shred your own cheese for smooth melting. Watch the broiler closely to prevent burning. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days; reheat in a 375°F oven for 8-10 minutes.
