  • Blue Cheese Yogurt Dip:
  • ½ cup (120 g) Greek yogurt
  • ¼ cup (60 g) crumbled blue cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon apple cider vinegar
  • Pinch of garlic powder
  • Salt and pepper to taste
  • Optional garnish: chopped fresh chives or parsley

Instructions

  1. Preheat oven to 450°F (230°C). Line a rimmed baking sheet with parchment paper or a silicone baking mat. Place a wire rack on top if using.
  2. In a medium bowl, whisk together flour, water or plant milk, garlic powder, onion powder, paprika, salt, and black pepper until smooth and thick enough to coat cauliflower.
  3. Dip each cauliflower floret into the batter, letting excess drip off, then roll in panko breadcrumbs until evenly coated. Arrange coated florets on the prepared baking sheet or wire rack, spaced apart.
  4. Bake for 20 minutes, flipping each floret halfway through to ensure even crisping. They should be golden brown and firm when done.
  5. Warm buffalo sauce gently in a small saucepan or microwave for 20 seconds.
  6. Transfer baked florets to a large bowl, pour buffalo sauce over, and toss to coat evenly.
  7. Return coated florets to the oven and bake for an additional 5-7 minutes to set the sauce and crisp edges.
  8. Meanwhile, prepare the blue cheese yogurt dip by mixing Greek yogurt, crumbled blue cheese, lemon juice, apple cider vinegar, garlic powder, salt, and pepper in a small bowl until creamy but slightly chunky. Refrigerate until serving.
