These crispy bacon-wrapped jalapeño poppers are a crowd-pleasing appetizer with a creamy, tangy filling and smoky bacon. Ready in 35 minutes, they’re perfect for game day, parties, or any gathering.

  • 12 medium fresh jalapeño peppers
  • 8 ounces cream cheese, softened
  • 1 cup sharp cheddar cheese, shredded
  • 12 slices thin-cut bacon
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: chopped fresh chives or ranch dressing for serving

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the center of the oven. Line a baking sheet with parchment paper or aluminum foil, and place a wire rack on top if you have one.
  2. Prepare the jalapeños. Cut each jalapeño in half lengthwise. Use a small spoon to scrape out the white membranes and seeds. For milder poppers, remove all membrane; for extra heat, leave some seeds in. Wear gloves if your skin is sensitive.
  3. Make the filling. In a small bowl, combine the softened cream cheese, shredded cheddar, garlic powder, smoked paprika, salt, and pepper. Mix until evenly incorporated. Taste and adjust seasoning if needed.
  4. Fill the peppers. Spoon or pipe the cheese mixture into each jalapeño half. Fill generously but not overflowing.
  5. Wrap with bacon. Cut each bacon slice in half crosswise. Wrap one half-slice around each stuffed jalapeño, starting at one end and overlapping slightly. Tuck the end of the bacon underneath the popper.
  6. Arrange on the baking sheet. Place the wrapped poppers on the wire rack or directly on the parchment-lined sheet, spacing them about an inch apart. Make sure the seam side of the bacon is facing down.
  7. Bake for 20-25 minutes. The poppers are done when the bacon is crispy and browned, and the filling is bubbly. Check at the 20-minute mark. If needed, switch to broil for the last 1-2 minutes, watching closely.
  8. Cool slightly before serving. Let the poppers rest on the baking sheet for 3-5 minutes. Transfer to a serving platter and garnish with chives if desired.

Notes

For best results, use thin-cut bacon and a wire rack to ensure even crisping. If using thick-cut bacon, par-cook it for 2 minutes in the microwave before wrapping. Let cream cheese come to room temperature for easier mixing. Do not overfill the peppers to prevent oozing. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days; reheat in the oven or air fryer for best texture.
