Learn how to make perfectly crispy air fryer roasted pumpkin seeds with sea salt in just 15 minutes. This easy snack is quick, simple, and irresistibly crunchy.

Ingredients

Scale
  • 1 cup fresh pumpkin seeds
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt
  • 1 tablespoon melted butter (optional)
  • ½ teaspoon garlic powder (optional)
  • Pinch of cayenne pepper (optional)

Instructions

  1. Separate the seeds from the pumpkin. Scoop out all the seeds and stringy pulp into a large bowl.
  2. Rinse the seeds thoroughly in a colander under cool water, rubbing away the stringy flesh until the seeds feel clean and slippery.
  3. Dry the seeds completely by spreading them on a clean kitchen towel or paper towels. Pat them dry and let them sit for 5 to 10 minutes if still damp.
  4. Preheat your air fryer to 350°F (175°C).
  5. In a medium bowl, toss the dried seeds with olive oil and sea salt until every seed is coated. Add optional garlic powder or cayenne if desired.
  6. Arrange the seeds in a single layer in the air fryer basket. Do not overcrowd; work in batches if necessary.
  7. Cook for 5 minutes.
  8. Shake the basket or stir the seeds with a spatula.
  9. Cook for another 3 to 5 minutes, watching closely after the 3-minute mark. Seeds are done when fragrant, lightly browned in spots, and sound hollow when shaken.
  10. Transfer the seeds to a plate or bowl and let them cool completely. They will continue to crisp up as they cool.

Notes

For best results, dry the seeds thoroughly before cooking. Watch the seeds closely after the 3-minute mark as they can burn quickly. Season with a pinch of salt after cooking for extra flavor. Store in an airtight container at room temperature for up to a week. Re-crisp in the air fryer at 300°F for 2 minutes if needed.
