Creative Eyeball Caprese Salad Skewers

A fun and spooky twist on classic Caprese salad, these eyeball skewers combine fresh mozzarella, cherry tomatoes, basil, and black olives for a perfect Halloween party appetizer that’s easy to make and delicious.

Ingredients

  • 16 oz (450 g) bocconcini or fresh mozzarella balls
  • 1 pint (300 g) cherry or grape tomatoes
  • 16 large pitted black olives (Kalamata or black ripe olives)
  • 16 fresh basil leaves
  • Balsamic glaze (optional, for drizzling)
  • 2 tablespoons extra virgin olive oil
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 16 wooden skewers or toothpicks

Instructions

  1. Rinse the cherry tomatoes and basil leaves. Pat dry gently with a paper towel to avoid excess moisture.
  2. Using a sharp paring knife, slice each pitted black olive into thin rounds about 1/8 inch (3 mm) thick to create the ‘pupils’ of the eyeballs.
  3. In a small bowl, combine the bocconcini and cherry tomatoes. Drizzle with 2 tablespoons of extra virgin olive oil, sprinkle with sea salt and freshly ground black pepper, then toss gently to coat.
  4. Assemble the skewers by placing a basil leaf at the bottom, followed by a mozzarella ball, then a tomato half (cut side facing out), and top with one olive slice pressed onto the tomato to resemble an eyeball. Repeat for all skewers.
  5. Arrange the skewers on a serving tray. Optionally, drizzle lightly with balsamic glaze for a sweet tang and shiny finish.
  6. Chill the skewers in the refrigerator if preparing ahead. Let them come to room temperature before serving for best flavor.

Notes

Use a sharp knife to slice olives thinly to avoid mushy pieces. If olive slices don’t stick well, dab a tiny bit of cream cheese or soft mozzarella on the back of each olive slice before pressing onto the tomato. Prepare skewers shortly before serving to keep basil fresh and mozzarella from sweating. Store leftovers in an airtight container in the fridge for up to 24 hours and bring to room temperature before serving.
