  • 3 tablespoons all-purpose flour
  • 1 ½ pounds Yukon Gold potatoes, peeled and cubed into ½-inch pieces
  • 4 cups chopped kale, stems removed
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • ½ cup grated Parmesan cheese
  • Fresh parsley or thyme for garnish (optional)

Instructions

  1. Heat the olive oil in a large Dutch oven over medium-high heat. Add the Italian sausage (casings removed) and break it up with a wooden spoon. Cook until browned, about 5-6 minutes. Use a slotted spoon to transfer the sausage to a bowl and set aside, leaving the rendered fat in the pot.
  2. Reduce the heat to medium. Add the diced onion to the pot and cook for 3-4 minutes until soft and translucent. Add the minced garlic and red pepper flakes (if using) and cook for 30 seconds until fragrant.
  3. Sprinkle the flour over the onion mixture and stir constantly for about 1 minute to cook out the raw flour taste.
  4. Slowly pour in the chicken broth while whisking continuously to prevent lumps. Then add the whole milk and whisk until smooth. Bring the mixture to a gentle simmer.
  5. Add the cubed Yukon Gold potatoes to the pot. Return to a simmer, then reduce the heat to medium-low. Cover and cook for 12-15 minutes until the potatoes are fork-tender, stirring occasionally.
  6. Stir in the chopped kale and cooked sausage. Cook for 3-4 minutes until the kale has wilted.
  7. Remove the pot from the heat. Stir in the grated Parmesan cheese until melted. Season with salt and black pepper to taste.
  8. Serve immediately, garnished with fresh parsley or thyme if desired.

Notes

If the soup thickens too much after sitting, stir in a splash of warm broth or milk when reheating. For a dairy-free version, use unsweetened oat milk or full-fat canned coconut milk and omit the Parmesan. For a lighter option, use turkey Italian sausage and 2% milk. To freeze, undercook the potatoes slightly and freeze in individual portions.
