  • 1 tablespoon (12g) chia seeds (optional)
  • ½ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Mash the banana in a medium mixing bowl until mostly smooth with a few small lumps.
  2. Add peanut butter, milk, maple syrup, and vanilla extract to the mashed banana. Whisk or stir vigorously until the peanut butter is fully incorporated and the mixture is smooth.
  3. Add rolled oats, chia seeds (if using), and a pinch of salt. Stir until everything is well combined.
  4. Divide the mixture evenly into two pint-sized mason jars or airtight containers, leaving space at the top for toppings.
  5. Seal the jars tightly and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats, add desired toppings (e.g., sliced banana, extra peanut butter, chopped peanuts, dark chocolate chips), and serve cold or warmed.

Notes

For best texture, use rolled oats (not instant or steel-cut). Mash the banana thoroughly for even sweetness. The oats will continue to soften over time; days 2-3 are the sweet spot. To warm, microwave for 30-45 seconds. Batch prep up to 5 days in advance or freeze for up to 3 months.
