These creamy peanut butter banana overnight oats are a quick, forgiving breakfast that tastes like a hug in a jar. With just five minutes of prep the night before, you’ll have a delicious, satisfying meal ready to grab and go in the morning.

Ingredients

Scale
  • 1 cup (90g) old-fashioned rolled oats
  • 1 cup (240ml) milk (dairy or non-dairy)
  • 1/4 cup (64g) creamy peanut butter
  • 1 medium ripe banana, mashed (about 1/2 cup or 120g)
  • 1–2 tablespoons (15-30ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds (optional)
  • 1 teaspoon (5ml) vanilla extract
  • Pinch of salt

Instructions

  1. In a medium mixing bowl, mash the ripe banana with a fork until mostly smooth with a few small lumps.
  2. Add the milk, peanut butter, maple syrup or honey, and vanilla extract. Whisk until the peanut butter is fully incorporated and the mixture is smooth.
  3. Stir in the rolled oats, chia seeds (if using), and a pinch of salt. Mix until well combined.
  4. Divide the mixture evenly into two 16-ounce mason jars or airtight containers.
  5. Seal the jars tightly and refrigerate for at least 4 hours, but ideally overnight (8-12 hours).
  6. In the morning, stir well before serving. Eat cold or microwave for 45-60 seconds if you prefer warm oats.
  7. Add toppings such as sliced banana, extra peanut butter, chopped peanuts, or dark chocolate chips.

Notes

Taste the mixture before refrigerating and adjust sweetness if needed. If the oats become too thick after sitting, stir in a splash of milk. For best texture, use old-fashioned rolled oats rather than quick oats. The oats will keep in the fridge for up to 5 days, but are best within 3 days.
