These creamy peanut butter banana overnight oats are a quick and easy breakfast that requires just 5 minutes of prep. The secret is mashing the banana directly into the oats for a naturally sweet, pudding-like texture in every bite.

  • 1 medium ripe banana
  • 2 tablespoons (32g) creamy peanut butter
  • ½ cup (120ml) milk of choice
  • ¼ cup (60g) Greek yogurt
  • 1 tablespoon (15ml) honey or maple syrup (optional)
  • 1 tablespoon (12g) chia seeds
  • ½ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Mash the banana in a jar or bowl until it’s a chunky paste.
  2. Add peanut butter, milk, Greek yogurt, honey/maple syrup (if using), vanilla extract, and salt. Stir until smooth.
  3. Add rolled oats and chia seeds. Mix until well combined.
  4. Seal the jar or cover the bowl and refrigerate for at least 4 hours, preferably overnight (8-12 hours).
  5. In the morning, stir the oats. If too thick, add a splash of milk. Add desired toppings and serve cold or at room temperature.

Notes

Mashing the banana into the oats is key for creamy texture. Use ripe, spotted bananas for best sweetness. Adjust milk if oats are too thick or thin. Store in fridge for up to 3 days. Do not freeze.
