  • 3 tablespoons creamy peanut butter (natural, no added sugar preferred)
  • 1 tablespoon maple syrup (or honey, agave, or date syrup)
  • 1 tablespoon chia seeds (optional but recommended)
  • 1/2 teaspoon vanilla extract (pure vanilla preferred)
  • Pinch of salt

Instructions

  1. Mash the banana: Peel the banana and place it in a medium mixing bowl. Use a fork to mash it until mostly smooth with a few small chunks remaining.
  2. Add the wet ingredients: Pour in the milk, Greek yogurt, maple syrup, and vanilla extract. Stir until the banana is evenly distributed throughout the liquid.
  3. Mix in the dry ingredients: Add the rolled oats, chia seeds (if using), and a pinch of salt. Stir well until all oats are fully coated and submerged.
  4. Add the peanut butter: Drop the peanut butter into the mixture and stir it in gently, leaving visible swirls and ribbons—do not fully incorporate.
  5. Divide into jars: Spoon the mixture evenly into 4 small or 2 large airtight containers (e.g., mason jars), leaving about 1/2 inch of space at the top.
  6. Top with banana slices (optional): If desired, slice the remaining half banana and press a few slices into the top of each jar.
  7. Refrigerate: Seal the jars tightly and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  8. Serve: In the morning, stir the oats. If too thick, add a splash of milk. Top with additional banana slices, a drizzle of peanut butter, or granola if desired. Serve cold or at room temperature.

Notes

For best results, use rolled oats (not instant or steel-cut). Mash half the banana into the mixture for even flavor distribution. Leave peanut butter in swirls for concentrated pockets of flavor. Chia seeds create a pudding-like texture. Oats keep in the fridge for up to 5 days. Do not freeze. For warm oats, microwave for 60-90 seconds.
