  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 2 cans (14.5 oz each) crushed tomatoes
  • 2 cups low-sodium vegetable broth or chicken broth
  • 1 teaspoon granulated sugar
  • ½ teaspoon salt, plus more to taste
  • ¼ teaspoon black pepper
  • ½ cup heavy cream
  • ½ cup fresh basil leaves, roughly chopped
  • Optional garnish: grated Parmesan cheese, extra drizzle of cream, or crusty bread for dipping

Instructions

  1. Melt the butter in a large pot over medium heat. Once foamy, add the diced onion and cook for about 5 minutes, stirring occasionally, until soft and translucent. Do not let it brown.
  2. Add the minced garlic and cook for another 30 seconds until fragrant, stirring constantly to prevent burning.
  3. Pour in the crushed tomatoes and broth. Add the sugar, salt, and pepper. Stir together and bring to a gentle simmer. Reduce heat to low and let it bubble softly for 15 minutes.
  4. Remove the pot from heat. Using an immersion blender, blend the soup until smooth. If using a regular blender, let the soup cool for 5 minutes first, then blend in batches, filling no more than halfway and holding the lid down with a towel.
  5. Return the pot to low heat and stir in the heavy cream. Let it warm through for about 2 minutes, but do not let it boil.
  6. Stir in the fresh basil right before serving. Taste and adjust salt and pepper if needed.
  7. Ladle into bowls, garnish with basil leaves and Parmesan if desired, and serve immediately with crusty bread or a grilled cheese sandwich.

Notes

For a dairy-free version, swap butter for olive oil and use full-fat coconut milk instead of heavy cream. For a vegan version, use vegetable broth and coconut milk. The soup thickens as it sits; add a splash of broth when reheating. Fresh basil is key—do not substitute dried.
