  • 4 cups (32 oz) low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tablespoon butter
  • Salt and black pepper to taste

Instructions

  1. Prep the ingredients first. Dice the onion, mince the garlic, and slice the sausage into ½-inch rounds. Peel the potatoes and cut them into ¾-inch cubes.
  2. Brown the sausage. Place your Dutch oven over medium-high heat. Add the sliced sausage in a single layer. Cook for 3-4 minutes per side, until deeply browned and a little crispy on the edges. Use a slotted spoon to transfer the sausage to a plate and set aside.
  3. Sauté the aromatics. Reduce the heat to medium. Add the butter to the pot with the rendered sausage fat. Once it melts, add the diced onion. Cook for 4-5 minutes, stirring occasionally, until the onion is soft and translucent. Add the minced garlic and cook for another 30 seconds, until fragrant.
  4. Add the potatoes and broth. Pour in the chicken broth and use your wooden spoon to scrape up any browned bits from the bottom of the pot. Add the cubed potatoes. Increase the heat to high and bring the broth to a boil.
  5. Simmer the soup. Once boiling, reduce the heat to medium-low and cover the pot. Let it simmer for 12-15 minutes, or until the potatoes are fork-tender.
  6. Add the cream and sausage. Remove the lid. Stir in the heavy cream and the browned sausage. Let the soup cook for another 2-3 minutes, just until everything is heated through and the broth has thickened slightly.
  7. Season and serve. Taste the soup. Add salt and black pepper as needed. Ladle the soup into bowls and garnish with fresh parsley, if desired. Serve hot.

Notes

If the soup seems too thick after adding the cream, stir in an extra ¼ cup of broth or water to thin it out. The soup actually gets better after sitting for a few hours as the flavors meld. For a lighter version, use half-and-half instead of heavy cream, but avoid milk as it may curdle.
