  • 1 cup (240 ml) Greek yogurt, full-fat or 2%
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh mint, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 clove garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon red wine vinegar (optional)
  • Salt and freshly cracked black pepper to taste
  • 1 teaspoon honey or maple syrup (optional)

Instructions

  1. Wash and thinly slice 2 medium cucumbers (about 14 oz). Peel halfway if desired. Place slices in a colander and sprinkle with a pinch of salt. Let sit for 10 minutes to draw out excess moisture.
  2. After 10 minutes, gently squeeze the cucumbers with your hands or pat dry with paper towels to remove excess water.
  3. In a bowl, whisk together 1 cup Greek yogurt, 2 tablespoons fresh lemon juice, 1 tablespoon extra virgin olive oil, 1 teaspoon red wine vinegar (if using), and 1 minced garlic clove. Season with salt and freshly cracked black pepper to taste. Whisk in 1 teaspoon honey or maple syrup if desired.
  4. Finely chop 2 tablespoons fresh dill, 1 tablespoon fresh mint, and 1 tablespoon fresh parsley.
  5. In a large bowl, add the drained cucumbers. Pour the creamy dressing over them, then gently fold in the chopped herbs. Mix just enough to coat evenly without bruising the cucumbers.
  6. Let the salad sit for at least 10 minutes in the fridge to allow flavors to meld. Serve chilled or at room temperature.
