  • 1/2 cup grated Parmesan cheese
  • 4 ounces cream cheese, softened
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • A handful fresh basil or parsley, chopped (for garnish)

Instructions

  1. Pat dry 6 bone-in, skinless chicken thighs. Season both sides generously with salt, pepper, and 1 teaspoon Italian seasoning.
  2. Heat 2 tablespoons olive oil in a skillet over medium-high heat. Brown chicken thighs for 3-4 minutes per side until golden. Transfer to crockpot. (Optional but recommended)
  3. In a mixing bowl, combine 1 cup heavy cream, 1/2 cup chicken broth, 4 ounces softened cream cheese, 1/2 cup grated Parmesan, 4 minced garlic cloves, 1 cup chopped sun-dried tomatoes, and 1/4 teaspoon red pepper flakes. Whisk until smooth.
  4. Pour the creamy mixture over the chicken thighs in the crockpot, ensuring the pieces are mostly covered.
  5. Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours until chicken is tender and reaches an internal temperature of 165°F (74°C).
  6. Optionally, stir gently once halfway through cooking to ensure sauce is evenly creamy.
  7. Once done, taste the sauce and adjust salt and pepper. Sprinkle freshly chopped basil or parsley on top for garnish. Serve hot.

Notes

Searing the chicken before slow cooking is optional but adds extra flavor and texture. Use sun-dried tomatoes packed in oil for best flavor. If sauce is too thin, thicken with cornstarch slurry near the end of cooking. Softened cream cheese blends smoothly into the sauce. Do not rush slow cooking time for best tenderness and sauce thickness.
