This crockpot cream cheese mashed potato casserole is a velvety, rich side dish that’s perfect for holidays or weeknight comfort food. Parboiled potatoes are mashed with cream cheese, butter, and sour cream, then slow-cooked to creamy perfection.

Ingredients

Scale
  • 3 pounds russet potatoes (about 6 medium), peeled and cut into 1-inch cubes
  • 8 ounces cream cheese, softened
  • 4 tablespoons unsalted butter, cubed
  • 1/2 cup whole milk, warmed
  • 1/4 cup sour cream
  • 1 teaspoon salt, plus more for boiling water
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder (optional)
  • Fresh chives or parsley for garnish (optional)

Instructions

  1. Peel and cut the potatoes into 1-inch cubes.
  2. Place the cubed potatoes in a large pot and cover with cold water by about an inch. Add a generous tablespoon of salt to the water. Bring to a boil over high heat, then reduce to medium and simmer for 12-15 minutes until fork-tender.
  3. Drain the potatoes in a colander for 2 minutes, shaking to remove excess water.
  4. Transfer the drained potatoes to a large mixing bowl. Add the softened cream cheese, cubed butter, warmed milk, sour cream, salt, pepper, and garlic powder (if using). Mash until smooth, leaving some small lumps if desired.
  5. Lightly grease the inside of a 6-quart crockpot with nonstick cooking spray or butter.
  6. Scoop the mashed potatoes into the prepared crockpot and spread into an even layer.
  7. Cover and cook on low for 2-3 hours, until hot all the way through and edges are slightly golden.
  8. Stir gently before serving. If dry, stir in an extra splash of warm milk.
  9. Garnish with fresh chives or parsley if desired. Serve warm.

Notes

Do not skip parboiling the potatoes; raw potatoes in a slow cooker become mealy. Warm the milk to prevent gluey potatoes. Avoid lifting the lid during cooking. For make-ahead, prepare through step 6, refrigerate overnight, then cook on low for 3-4 hours. Leftovers keep in the refrigerator for up to 4 days or freeze for up to 3 months.
