This creamy, tangy, and spicy buffalo chicken dip is made in the crockpot with blue cheese, cream cheese, and shredded chicken. It’s the perfect crowd-pleasing appetizer for game day or any gathering, and it even converts blue cheese skeptics.

Ingredients

Scale
  • 2 (8-ounce) blocks cream cheese, softened
  • 1 cup ranch dressing
  • 1/2 cup buffalo wing sauce
  • 2 cups cooked, shredded chicken
  • 1 cup crumbled blue cheese
  • 1/2 cup shredded mozzarella cheese
  • Optional garnishes: fresh chives or green onions, extra buffalo sauce, extra blue cheese crumbles

Instructions

  1. In a medium mixing bowl, add the two blocks of softened cream cheese. Pour in the 1 cup of ranch dressing and 1/2 cup of buffalo wing sauce. Using a hand mixer or a sturdy spoon, beat the mixture until it’s smooth, creamy, and completely combined.
  2. Add the 2 cups of shredded chicken, 1 cup of crumbled blue cheese, and 1/2 cup of shredded mozzarella to the cream cheese mixture. Stir everything together with a spatula until all the chicken is evenly coated.
  3. Scrape the entire mixture into your slow cooker. Spread it into an even layer with the spatula.
  4. Cover the crockpot with the lid and cook on LOW for 2 to 3 hours, or on HIGH for 1 to 1.5 hours. The dip is ready when it’s bubbling gently around the edges and the cheese is fully melted. Stir it once halfway through cooking.
  5. Once the dip is hot and bubbly, give it a good stir. Taste it and adjust seasoning if needed (add more buffalo sauce for heat, more ranch for tang, or more blue cheese for flavor).
  6. Switch the crockpot to the WARM setting. Sprinkle the top with fresh chives or green onions, a few extra blue cheese crumbles, and a light drizzle of buffalo sauce. Serve immediately with tortilla chips, celery sticks, carrot sticks, or crusty bread.

Notes

Use room temperature cream cheese for a smooth dip. Don’t overcook on HIGH to avoid greasy separation. For a lighter version, use reduced-fat cream cheese and ranch, but full-fat yields the best texture. Leftovers can be stored in the refrigerator for up to 4 days and reheated in the crockpot or microwave.
