  • 1 pound (450g) large shrimp, peeled and deveined (fresh or thawed if frozen)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped (oil-packed or rehydrated dry-packed)
  • 3 cups fresh baby spinach
  • 3/4 cup (180ml) heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (blend of oregano, basil, thyme)
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 tablespoon freshly squeezed lemon juice

Instructions

  1. Rinse and pat dry 1 pound (450g) of large shrimp, peeled and deveined. Season lightly with salt and pepper.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering (about 1-2 minutes). Add minced garlic and sauté for 30 seconds until fragrant but not browned.
  3. Add 1/3 cup chopped sun-dried tomatoes and stir for about 1 minute to infuse the oil and garlic.
  4. Add the seasoned shrimp in a single layer. Cook for about 2 minutes on one side until pink edges appear, then flip and cook another 1-2 minutes until shrimp are opaque and cooked through.
  5. Pour in 3/4 cup heavy cream, sprinkle 1 teaspoon dried Italian herbs and 1/4 teaspoon red pepper flakes if using, and stir to combine. Let the sauce simmer gently for 2-3 minutes until it thickens slightly.
  6. Add 3 cups fresh baby spinach and 1/2 cup freshly grated Parmesan cheese. Stir until the spinach wilts and the cheese melts, thickening the sauce further (about 2 minutes).
  7. Remove from heat and squeeze 1 tablespoon fresh lemon juice over the dish. Taste and adjust salt and pepper as needed.
  8. Serve immediately over pasta, rice, or crusty bread.

Notes

Do not overcrowd the pan to avoid steaming the shrimp. Cook shrimp quickly to prevent rubbery texture. Stir gently and avoid boiling the cream to prevent curdling. If sauce is too thick, add a splash of chicken broth or water. Add Parmesan cheese last for smooth melting.
