This cozy spiced wassail punch with cloves and cinnamon is the easiest holiday drink you’ll make. It comes together in under 20 minutes with simple pantry ingredients and fills your home with the warm, nostalgic scent of the holidays.

Ingredients

Scale
  • 8 cups (1.9 liters) apple cider
  • 2 cups (475 ml) orange juice
  • 1 cup (240 ml) pineapple juice
  • 8–10 whole cloves
  • 4 cinnamon sticks
  • 1 teaspoon whole allspice berries
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 orange, thinly sliced into rounds
  • 1 apple, thinly sliced
  • Extra cinnamon sticks for serving (optional)
  • Honey or maple syrup to taste (optional)

Instructions

  1. Combine the liquids: Pour the apple cider, orange juice, and pineapple juice into a large pot. Turn the heat to medium-high and let it start warming up while you prepare the spices. Don’t let it boil yet.
  2. Add the whole spices: Drop in the whole cloves, cinnamon sticks, and allspice berries. If using fresh ginger instead of ground, add the slice now. Give everything a good stir with a wooden spoon.
  3. Add the ground spices: Sprinkle in the ground nutmeg and ground ginger. Stir again to make sure nothing clumps together.
  4. Simmer gently: Bring the mixture to a gentle simmer (small bubbles around the edges, not a rolling boil). Reduce the heat to low and let it simmer uncovered for 15-20 minutes.
  5. Strain the spices: Place a fine-mesh strainer over a large heatproof bowl or another pot. Carefully pour the punch through the strainer to catch all the whole spices. Discard the solids.
  6. Taste and adjust: Give the strained punch a taste. If not sweet enough, stir in a tablespoon of honey or maple syrup. If not spicy enough, add a pinch more nutmeg.
  7. Add the fruit garnish: Float the orange slices and apple slices in the punch.
  8. Serve warm: Ladle the punch into heatproof mugs. If desired, pop a cinnamon stick into each mug as a stirrer. Serve immediately.

Notes

For a party, keep the punch warm in a slow cooker on the ‘warm’ setting for up to 3 hours after straining. Toast the cinnamon sticks and allspice berries in a dry skillet for 60 seconds before adding for deeper flavor. The punch can be made a day ahead and refrigerated (without fruit slices); reheat gently before serving. For an adult version, add 1 cup of dark rum or bourbon after straining.
