These elegant champagne jello shots are firm yet tender, with a bright champagne flavor and a touch of lemon. Perfect for New Year’s Eve, they’re make-ahead friendly and customizable with edible glitter and fresh fruit.

Ingredients

Scale
  • 1 ½ cups (360 ml) champagne or sparkling wine (dry brut or extra brut)
  • 3 tablespoons (about 3 packets, 21 g) unflavored gelatin powder (e.g., Knox)
  • ⅓ cup (65 g) granulated sugar
  • 2 tablespoons (30 ml) fresh lemon juice
  • ½ cup (120 ml) cold or room temperature water
  • Edible glitter or gold luster dust (optional, for garnish)
  • Fresh raspberries or pomegranate arils (optional, for garnish)

Instructions

  1. Bloom the gelatin: Pour the cold water into a medium mixing bowl. Sprinkle the gelatin powder evenly over the surface. Let it sit for 5-10 minutes until it looks like a firm, wobbly mass.
  2. Heat the champagne: Pour the champagne into a small saucepan. Heat over medium-low heat, stirring gently, until warm but not boiling (around 140°F/60°C). Tiny bubbles should form around the edges but no active simmering. This takes about 3-4 minutes.
  3. Combine everything: Remove the saucepan from heat. Add the sugar and stir until dissolved, about 1 minute. Pour this warm champagne mixture over the bloomed gelatin. Add the lemon juice. Whisk gently but thoroughly until the gelatin is completely dissolved and the mixture is smooth.
  4. Cool the mixture: Let the mixture cool for about 10-15 minutes at room temperature until warm but not hot.
  5. Fill the cups: Place shot cups on a baking sheet. Using a liquid measuring cup with a spout, carefully pour the mixture into each cup, filling them about ¾ full. If using silicone molds, place them on the baking sheet first, then pour.
  6. Add garnishes (optional): If using fresh raspberries or pomegranate arils, drop one or two into each cup now. Sprinkle edible glitter on top if desired.
  7. Refrigerate: Carefully transfer the baking sheet to the refrigerator. Make sure it’s level. Refrigerate for at least 4 hours, but overnight is better. The jello should be firm to the touch and hold its shape when tilted.
  8. Serve: If using plastic cups, serve them right in the cups with lids removed. If using silicone molds, gently pop them out and arrange on a serving platter.

Notes

Don’t boil the champagne; gentle heating preserves bubbles and alcohol. Use cold water for blooming gelatin to avoid lumps. Whisk gently to prevent cloudiness. For best texture, let set overnight. Flavor improves after a day in the fridge. For non-alcoholic version, substitute champagne with sparkling white grape juice and reduce sugar to 2 tablespoons.
