Ingredients

Scale
  • 1.5 pounds ground turkey (93% lean)
  • 1 medium yellow onion, diced (about 1.5 cups)
  • 3 cloves garlic, minced
  • 2 cans (15 ounces each) cannellini beans, drained and rinsed
  • 1 can (15 ounces) white corn, drained
  • 2 cans (4 ounces each) diced green chiles
  • 4 cups low-sodium chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 4 ounces cream cheese, softened and cubed
  • 1/2 cup heavy cream or half-and-half
  • Juice of 1 lime (about 2 tablespoons)
  • Fresh cilantro, chopped (for topping)
  • Shredded Monterey Jack cheese (for topping)
  • Diced avocado (for topping)
  • Tortilla chips or strips (for topping)
  • Sour cream or Greek yogurt (for topping)
  • Sliced jalapeños (for topping)

Instructions

  1. Brown the turkey: Heat a large skillet over medium-high heat. Add ground turkey and cook, breaking it up, until no longer pink (6-8 minutes). Season with a pinch of salt and pepper.
  2. Sauté aromatics: Push turkey to one side, add diced onion, and cook 2 minutes until softened. Add minced garlic and cook 30 seconds until fragrant. Stir together.
  3. Transfer to slow cooker: Spoon turkey and onion mixture into a 6-quart slow cooker.
  4. Add beans and corn: Stir in drained cannellini beans and white corn.
  5. Add chiles and spices: Stir in diced green chiles, cumin, oregano, smoked paprika, salt, black pepper, and cayenne (if using).
  6. Pour in broth: Add chicken broth and stir until well combined.
  7. Cook: Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  8. Add creamy elements: 30 minutes before serving, stir in cubed cream cheese and heavy cream. Cook 20-30 minutes, stirring occasionally, until cream cheese is melted and broth is smooth.
  9. Finish with lime: Just before serving, stir in lime juice. Taste and adjust seasoning.
  10. Serve: Ladle into bowls and top with desired toppings.

Notes

Don’t add cream cheese at the beginning or it may become grainy. For a thicker chili, mash some beans against the side of the slow cooker. For a dairy-free version, use full-fat coconut milk instead of cream cheese and heavy cream. Leftovers keep in the refrigerator for up to 4 days and freeze for up to 3 months.
