Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs / 680g)
  • 4 tablespoons unsalted butter, softened (56g)
  • 4 cloves garlic, minced (about 2 teaspoons)
  • 1 teaspoon salt (5g)
  • 1/2 teaspoon black pepper (2g)
  • 1 teaspoon dried thyme (2g)
  • 1/2 teaspoon paprika (2g)
  • 2 cups broccoli florets (about 200g)
  • 1 cup baby carrots (about 150g)
  • 1 medium red onion, cut into wedges (about 150g)
  • 2 tablespoons olive oil (30ml)
  • 1/4 teaspoon salt (1g)
  • 1/4 teaspoon black pepper (1g)
  • 2 tablespoons unsalted butter (28g) (for optional drizzle)
  • 1 clove garlic, minced (for optional drizzle)
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Place the oven rack in the middle position.
  2. Pat the chicken thighs dry with paper towels. Place on a plate and set aside.
  3. In a small bowl, combine softened butter, minced garlic, salt, pepper, dried thyme, and paprika. Mix until well incorporated.
  4. Rub the garlic butter mixture all over the chicken thighs, under the skin if possible, and all over the top.
  5. In a separate bowl, toss broccoli florets, baby carrots, and red onion wedges with olive oil, salt, and pepper.
  6. Arrange chicken thighs skin-side up in the center of a rimmed sheet pan, leaving space between each piece. Arrange vegetables around the chicken in a single layer.
  7. Roast for 25-30 minutes, until chicken skin is golden brown and crispy, and internal temperature reaches 165°F (74°C). Vegetables should be tender and caramelized.
  8. During the last 5 minutes of roasting, make the optional garlic butter drizzle: In a small saucepan over low heat, melt 2 tablespoons butter with extra minced garlic. Cook 1-2 minutes until fragrant, then remove from heat.
  9. Remove sheet pan from oven and let rest for 5 minutes. Drizzle garlic butter sauce over chicken and vegetables, garnish with fresh parsley if desired, and serve immediately.

Notes

For best results, use room-temperature butter and pat chicken dry for crispy skin. If vegetables brown too quickly, tent them loosely with foil. Let chicken rest 5 minutes before serving. Leftovers keep in the refrigerator for up to 4 days.
