Ingredients

Scale
  • 6 medium apples (about 2.5 lbs / 1.1 kg), peeled, cored, and sliced ¼-inch thick
  • ¼ cup (50g) granulated sugar
  • 2 tablespoons (15g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • Pinch of salt
  • 2 tablespoons (30ml) lemon juice
  • ½ cup (100g) packed light brown sugar
  • 4 tablespoons (60g) unsalted butter, cut into cubes
  • ¼ cup (60ml) heavy cream
  • ¼ teaspoon flaky sea salt (like Maldon), plus more for finishing
  • ½ teaspoon vanilla extract
  • 1 cup (90g) old-fashioned rolled oats
  • ¾ cup (90g) all-purpose flour
  • ½ cup (100g) packed light brown sugar
  • ¼ cup (50g) granulated sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup (115g) unsalted butter, cold and cut into small cubes

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Make the salted caramel sauce: In a small saucepan over medium heat, combine the brown sugar and cubed butter. Stir constantly until the butter is melted and the mixture is smooth and bubbling, about 2-3 minutes. Slowly pour in the heavy cream while stirring—it will bubble up vigorously. Let it simmer for another minute, then remove from heat. Stir in the vanilla and ¼ teaspoon of flaky sea salt. Set aside to cool slightly.
  3. Prepare the apples: In a large mixing bowl, toss the sliced apples with the granulated sugar, flour, cinnamon, nutmeg, salt, and lemon juice. Use your hands to coat every slice. Let it sit for 5 minutes.
  4. Make the oat crumble topping: In another large bowl, whisk together the oats, flour, both sugars, cinnamon, and salt. Add the cold, cubed butter. Cut it in using a pastry cutter or two forks until the mixture looks like coarse, pebbly sand with some pea-sized butter lumps remaining.
  5. Assemble the crisp: Pour the apple mixture into an ungreased 8×8-inch baking dish and spread into an even layer. Drizzle about half of the salted caramel sauce over the apples. Sprinkle the oat crumble evenly over the top, covering all the apples. Do not press it down.
  6. Bake: Place the dish on a baking sheet to catch any drips. Bake for 40-45 minutes, until the filling is bubbly and the topping is deep golden brown. If the topping is browning too quickly around the 30-minute mark, tent loosely with foil.
  7. Finish and rest: Remove from the oven and let it cool on a wire rack for at least 15 minutes. Just before serving, warm the reserved caramel sauce and drizzle it over the top. Sprinkle with a little more flaky sea salt.

Notes

Don’t skip the rest time after baking—it allows the juices to thicken. Use cold butter for the topping to ensure a crunchy texture. Slice apples evenly for even cooking. Watch the caramel closely to prevent burning. Bake on a sheet pan to catch drips.
