Ingredients

Scale
  • 6 medium apples, peeled, cored, and sliced (about ¼-inch thick)
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 tablespoons all-purpose flour
  • ½ cup unsalted butter, cut into cubes
  • 1 cup packed light brown sugar
  • ½ cup heavy cream
  • 1 teaspoon vanilla extract
  • ½ teaspoon flaky sea salt
  • 1 cup old-fashioned rolled oats
  • ¾ cup all-purpose flour
  • ½ cup packed light brown sugar
  • ¼ cup granulated sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup unsalted butter, cold and cut into small cubes

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven.
  2. Make the salted caramel sauce: In a medium saucepan over medium heat, melt ½ cup butter. Add 1 cup brown sugar and whisk constantly until smooth and bubbling, about 2-3 minutes. Slowly pour in ½ cup heavy cream while whisking. Cook for another minute, then remove from heat. Stir in 1 teaspoon vanilla and ½ teaspoon flaky sea salt. Set aside to cool slightly.
  3. Prepare the apples: Peel, core, and slice 6 apples into ¼-inch thick slices. Toss in a large bowl with ¼ cup granulated sugar, 1 tablespoon lemon juice, 1 teaspoon cinnamon, ¼ teaspoon nutmeg, and 2 tablespoons flour until coated.
  4. Make the oat crumble: In a separate large bowl, whisk together 1 cup old-fashioned oats, ¾ cup flour, ½ cup brown sugar, ¼ cup granulated sugar, ½ teaspoon cinnamon, and ¼ teaspoon salt. Add ½ cup cold butter cubes. Use a pastry cutter or fingers to work butter into dry ingredients until mixture resembles coarse sand with some pea-sized butter pieces.
  5. Assemble the crisp: Spread apple mixture evenly in a 9×13-inch baking dish. Drizzle about half of the salted caramel sauce over the apples. Sprinkle oat crumble evenly over the top.
  6. Bake: Place dish on a baking sheet. Bake for 40-45 minutes, until filling is bubbling around edges and topping is golden brown and crispy. If topping browns too quickly after 30 minutes, tent loosely with foil.
  7. Cool and serve: Let crisp rest for at least 10 minutes. Drizzle remaining salted caramel sauce over top, sprinkle with extra flaky sea salt, and serve warm.

Notes

Don’t skip the flour in the apple mixture—it prevents a soupy filling. Use cold butter for the crumble to ensure a crispy topping. Let the crisp rest for 10 minutes before serving to allow the filling to set. For gluten-free, use a 1:1 gluten-free flour blend and certified gluten-free oats. For dairy-free, use vegan butter and full-fat coconut cream.
