Ingredients

Scale
  • ½ cup (1 stick / 113g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ¾ cups (220g) all-purpose flour
  • 2 tablespoons (10g) unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 tablespoon red food coloring (or about 15 drops gel coloring)
  • 1 teaspoon white vinegar
  • ½ cup (60g) powdered sugar, for rolling

Instructions

  1. Cream the butter and sugar: In a medium mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes with a hand mixer on medium speed.
  2. Add the wet ingredients: Beat in the egg, vanilla extract, and red food coloring until just combined. Stir in the white vinegar.
  3. Combine the dry ingredients: In a separate small bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  4. Mix the dough: Gradually add the dry ingredients to the wet mixture, mixing on low speed or stirring with a wooden spoon until just incorporated. The dough should be soft, slightly sticky, and deep reddish-brown.
  5. Chill the dough: Wrap the dough in plastic wrap and flatten into a disc. Refrigerate for at least 1 hour, or up to 24 hours.
  6. Preheat and prep: Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper. Pour powdered sugar into a shallow bowl.
  7. Shape the cookies: Scoop chilled dough by the tablespoonful (about 20g each) and roll into balls. Roll each ball in powdered sugar until completely coated, then place on prepared baking sheet about 2 inches apart.
  8. Bake: Bake for 10-12 minutes. At 10 minutes, edges should be set and tops crinkled; centers will look slightly soft.
  9. Cool and cut: Let cookies cool on baking sheet for exactly 5 minutes. Use a heart-shaped cookie cutter to cut out hearts from warm cookies. Transfer to a cooling rack.
  10. Repeat: Gather scraps, gently press together, re-roll, coat in powdered sugar, and bake again. Yields about 18-20 cookies total.

Notes

Chill dough thoroughly for at least 1 hour to prevent spreading. Use a light hand with powdered sugar; tap off excess. Don’t skip the vinegar—it deepens the red color and adds tang. Watch baking time closely; start checking at 9 minutes. Cut hearts while cookies are still warm (at 5-minute mark) for clean shapes. If kitchen is warm, chill shaped dough balls on baking sheet for 10 minutes before baking.
