This cozy banana bread is made entirely in one bowl with no mixer required. It’s perfectly moist, studded with chocolate chips, and comes together in minutes with minimal cleanup.

Ingredients

Scale
  • 3 large ripe bananas (about 1 ½ cups mashed)
  • ½ cup (1 stick) unsalted butter, melted
  • ¾ cup granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Place a rack in the center position. Line a 9×5-inch loaf pan with parchment paper, leaving some overhang on the long sides. Lightly grease the parchment with butter or non-stick spray.
  2. In your large mixing bowl, add the three ripe bananas. Use a fork or potato masher to mash them until they’re mostly smooth with a few small lumps. You should have about 1 ½ cups of mashed banana.
  3. To the same bowl with the mashed bananas, add the melted butter (make sure it’s not hot), granulated sugar, egg, and vanilla extract. Stir everything together with your spatula or wooden spoon until the mixture is smooth and well combined.
  4. Sprinkle the all-purpose flour, baking soda, and salt over the wet mixture. Stir gently—just until you see no more streaks of white flour. The batter will be thick and slightly lumpy. Do not overmix.
  5. Add the cup of chocolate chips to the batter. Use your spatula to fold them in with just a few strokes. Reserve a small handful of chips (about 2 tablespoons) to sprinkle on top of the batter once it’s in the pan.
  6. Scrape the batter into your prepared loaf pan. Use the spatula to spread it evenly into the corners. Sprinkle the reserved chocolate chips on top, pressing them in gently so they stick.
  7. Place the pan in the preheated oven and bake for 50-60 minutes. Start checking at the 50-minute mark. The bread is done when a toothpick inserted into the center comes out clean or with just a few moist crumbs. If the top is browning too quickly (after about 40 minutes), tent the pan loosely with aluminum foil.
  8. Let the bread cool in the pan on a wire rack for 15 minutes. Then, using the parchment paper overhang, lift the bread out of the pan and transfer it to the wire rack to cool completely.

Notes

Don’t overmix the batter to avoid tough bread. Use room-temperature ingredients for even mixing. Check doneness with a toothpick or internal temperature of 200-205°F. Let cool completely before slicing. Day-old bread tastes even better and can be toasted.
