A warm, oozy wheel of brie topped with burst ruby cranberries and rosemary-infused honey, perfect for holiday gatherings. This easy appetizer comes together in 25 minutes with just five simple ingredients.

Ingredients

Scale
  • 1 (8-ounce) wheel of brie cheese
  • 1/2 cup fresh or frozen cranberries
  • 3 tablespoons honey
  • 2 sprigs fresh rosemary
  • Flaky sea salt, for finishing
  • Crusty baguette slices, for serving
  • Crackers, for serving
  • Sliced apples or pears, for serving

Instructions

  1. Preheat your oven to 350°F (175°C). Let the brie sit at room temperature for 10-15 minutes.
  2. Score the top of the brie with a shallow crosshatch pattern, about 1/4 inch deep.
  3. Place the brie in a small oven-safe dish or cast iron skillet.
  4. Spoon the cranberries over the top of the brie.
  5. In a small saucepan, warm the honey and rosemary sprigs over low heat for 3-4 minutes until fragrant. Remove rosemary sprigs or leave for garnish.
  6. Drizzle the warm rosemary honey over the brie and cranberries.
  7. Bake for 15-18 minutes, until the brie is soft and puffy and the cranberries have started to burst.
  8. Let the brie rest at room temperature for 5 minutes.
  9. Sprinkle with flaky sea salt just before serving.
  10. Transfer to a serving platter and surround with baguette slices, crackers, and fruit.

Notes

Let the brie sit at room temperature before baking to ensure even melting. Score the rind gently to allow honey to seep in without leaking cheese. Use whole cranberries for tart bursts; avoid jam. Toast bread first to prevent sogginess. Rosemary honey can be made up to a week ahead.
