This isn’t just another guacamole recipe—roasted garlic and toasted cumin give it a mellow sweetness and warmth that makes every bite interesting. Perfect for Halloween, game nights, or any Tuesday that needs a little fun.

Ingredients

Scale
  • 4 ripe avocados
  • 1 small lime, juiced (about 2 tablespoons)
  • 1/4 cup finely chopped red onion
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 1 Roma tomato, seeded and diced (optional)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 head of garlic
  • 6–8 corn or flour tortillas
  • 2 tablespoons olive oil
  • 1/2 teaspoon smoked paprika
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Slice off the top quarter of the garlic head, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft and golden. Let cool.
  2. While garlic roasts, stack tortillas and cut into triangle shapes (6-8 per tortilla). Arrange on a baking sheet, brush with olive oil, sprinkle with smoked paprika and salt. Bake for 8-10 minutes, flipping halfway, until golden and crispy.
  3. In a small dry skillet over medium heat, toast the ground cumin for about 30 seconds until fragrant. Transfer to a small bowl to cool.
  4. Dice the red onion, mince the jalapeño (remove seeds for less heat), chop the cilantro, and dice the tomato if using. Squeeze the lime juice into a small bowl.
  5. Cut avocados in half, remove pits, and scoop flesh into a mixing bowl. Add lime juice immediately. Mash with a fork to desired consistency (mostly smooth with some chunks).
  6. Squeeze roasted garlic cloves out of skins, mash into a paste, and stir into avocado mixture.
  7. Stir in diced onion, jalapeño, cilantro, tomato (if using), toasted cumin, salt, and pepper. Taste and adjust seasoning as needed.
  8. Serve immediately in a bowl with tortilla fangs arranged around the edge. If not serving right away, press plastic wrap directly onto the surface to prevent browning.

Notes

Don’t over-mash the avocados; leave some chunks for texture. Toast the cumin for 30 seconds to bring out its nutty flavor. Watch the garlic closely to avoid burning. If guacamole is too thick, stir in a teaspoon of water or extra lime juice. If too thin, mash another half avocado and mix in. For best results, serve within the first hour.
