Ingredients

Scale
  • 8 oz brie cheese (double-cream recommended)
  • 6 oz sharp cheddar cheese, sliced
  • 4 oz goat cheese log
  • 6 oz prosciutto, thinly sliced
  • 4 oz salami, sliced (mix of genoa and soppressata)
  • 2 crisp apples (Honeycrisp or Granny Smith), cored and sliced
  • 1 ripe pear (Bartlett or Bosc), sliced
  • 1 cup seedless red grapes, washed and patted dry
  • 1/2 cup dried figs (optional)
  • 1/3 cup high-quality honey (local wildflower honey preferred)
  • 1/2 cup candied pecans
  • 1/4 cup pumpkin seeds (pepitas), toasted
  • 1 small baguette, sliced into thin rounds and toasted
  • 1 box of assorted crackers (water crackers and buttery rounds)
  • Fresh rosemary sprigs for garnish (optional)

Instructions

  1. Prep the Fruit: Wash and dry the apples, pear, and grapes. Core the apples and pear, then slice them thinly (about 1/4-inch thick). Toss the apple slices with a squeeze of lemon juice to prevent browning. Set aside.
  2. Slice the Cheese: Cut the brie into wedges (leave the rind on). Slice the sharp cheddar into thin triangles or rectangles. Keep the goat cheese log whole or slice it into rounds about 1/2-inch thick.
  3. Arrange the Meats: Fold the prosciutto slices into loose ribbons and place them in a cluster on one side of the board. Fan out the salami slices in a separate pile nearby.
  4. Place the Cheese: Position the brie wedges, cheddar slices, and goat cheese in different spots around the board, leaving space between each type.
  5. Add the Fruit: Scatter the apple slices, pear slices, grapes, and dried figs in the gaps between the cheeses and meats.
  6. Fill the Gaps: Sprinkle the candied pecans and toasted pumpkin seeds over the board, tucking them into empty spaces.
  7. Drizzle the Honey: Pour the honey into a small bowl and place it in the center or off to one side. For extra flair, drizzle a little honey directly over the brie and goat cheese.
  8. Add the Bread & Crackers: Arrange the toasted baguette slices and crackers in a stack or fan shape on the remaining open space.
  9. Garnish and Serve: Tuck a few fresh rosemary sprigs around the board. Serve immediately, or cover with plastic wrap and refrigerate for up to 2 hours (add the honey and crackers just before serving).

Notes

Let cheeses sit at room temperature for 20-30 minutes before serving for best texture. For a dairy-free option, use plant-based cheeses. For a gluten-free version, use gluten-free crackers and skip the baguette. Prep fruit and cheese up to 24 hours in advance; assemble 30 minutes before serving.
