Ingredients

Scale
  • 3 ripe avocados
  • 1 small lime, juiced (about 2 tablespoons)
  • ¼ cup finely diced red onion
  • 1 small jalapeño, seeded and minced (optional)
  • ¼ cup chopped fresh cilantro (plus extra for hair)
  • 1 small Roma tomato, diced and seeded
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1 bag sturdy tortilla chips (restaurant-style scoop chips recommended)
  • ¼ cup pitted black olives, sliced into rounds
  • 1 small carrot, cut into tiny matchsticks or triangles
  • Fresh cilantro leaves (for hair)
  • 1 tablespoon sour cream or Greek yogurt (optional, for decoration)

Instructions

  1. Prep your ingredients first: dice the red onion, mince the jalapeño (if using), chop the cilantro, dice the tomato, slice the olives into rounds, and cut the carrot into tiny matchstick pieces.
  2. Cut the avocados in half lengthwise, twist to separate, remove the pit, and scoop the flesh into a mixing bowl.
  3. Add the lime juice immediately to prevent browning. Mash the avocados with a fork until desired consistency (slightly chunky recommended).
  4. Add the diced onion, jalapeño, chopped cilantro, tomato, salt, pepper, and garlic powder. Stir gently until well combined. Taste and adjust salt or lime juice if needed.
  5. Let the guacamole rest for 5 minutes to allow flavors to meld.
  6. Take a sturdy tortilla chip and spoon a generous dollop of guacamole onto it (about 1 tablespoon). Use the back of a spoon to smooth it into a rounded rectangle shape (Frankenstein head).
  7. Press two olive slices into the guacamole for eyes. Place a small carrot matchstick on each side for neck bolts. Stick a few cilantro leaves on top for hair. Optionally, add a tiny dollop of sour cream between the eyes for a highlight.
  8. Repeat with remaining chips and guacamole to make about 12-15 bites. Arrange on a serving platter.
  9. Serve immediately for best crunch and freshness.

Notes

For best results, use ripe Hass avocados that yield slightly to gentle pressure. If making ahead, press plastic wrap directly onto the surface of the guacamole and refrigerate for up to 24 hours. Assemble bites just before serving to keep chips crunchy. For a spicier version, add a finely chopped serrano pepper or a teaspoon of hot sauce. For a low-carb option, use cucumber rounds or bell pepper slices instead of chips.
