A hearty, soul-soothing taco soup made in the slow cooker with ground beef, beans, corn, and a secret weapon—ranch seasoning. It’s the perfect easy weeknight dinner that tastes like a warm hug on a cold day.

Ingredients

Scale
  • 1 lb ground beef (80/20)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 packet (1 oz) ranch dressing mix
  • 1 packet (1 oz) taco seasoning
  • 1 can (15 oz) diced tomatoes with green chiles (e.g., Rotel)
  • 1 can (15 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (14.5 oz) beef broth (low-sodium recommended)
  • Optional toppings: shredded cheddar cheese, sour cream, diced avocado, fresh cilantro, crushed tortilla chips, lime wedges

Instructions

  1. Brown the ground beef: Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until no longer pink (about 6-8 minutes). Transfer to a plate lined with paper towels to drain excess grease. Leave about 1 tablespoon of rendered fat in the pan.
  2. Sauté the aromatics: In the same skillet, add the diced onion and cook over medium heat until soft and translucent (about 3 minutes). Add the minced garlic and cook for another 30 seconds until fragrant. Scrape up any browned bits from the bottom of the pan.
  3. Combine everything in the slow cooker: Transfer the cooked beef, sautéed onions, and garlic to a 6-quart slow cooker. Add the diced tomatoes with green chiles, fire-roasted diced tomatoes, black beans, kidney beans, corn, and beef broth. Sprinkle the ranch dressing mix and taco seasoning over the top. Stir well to combine.
  4. Set it and forget it: Cover the slow cooker and cook on LOW for 6-8 hours or on HIGH for 3-4 hours. Taste and adjust seasoning if needed (add a pinch of salt or a squeeze of lime juice at the end).
  5. Serve and garnish: Ladle the soup into bowls and top with shredded cheddar cheese, sour cream, diced avocado, fresh cilantro, crushed tortilla chips, and a squeeze of lime juice as desired.

Notes

Don’t skip browning the meat—it adds deep flavor. Taste before adding extra salt, as seasoning packets contain sodium. For a thicker soup, mash some beans or stir in a cornstarch slurry. This soup tastes even better the next day. For a creamy version, stir in 4 oz of softened cream cheese during the last 30 minutes of cooking.
