A quick and easy 5-minute prep recipe for creamy peanut butter banana overnight oats that taste like a warm hug. Perfect for busy mornings, this make-ahead breakfast is made with simple pantry ingredients and can be customized with your favorite toppings.

Ingredients

Scale
  • 1 cup (90g) rolled oats (old-fashioned oats)
  • 1 cup (240ml) milk (dairy or plant-based)
  • 1/2 cup (120g) plain Greek yogurt
  • 3 tablespoons (48g) creamy peanut butter
  • 1 medium ripe banana, mashed (about 1/2 cup)
  • 1–2 tablespoons (15-30ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds (optional)
  • 1/2 teaspoon (2.5ml) vanilla extract
  • Pinch of salt

Instructions

  1. Mash the banana in a small bowl with a fork until mostly smooth (a few small lumps are fine).
  2. In a medium mixing bowl, whisk together the mashed banana, milk, Greek yogurt, peanut butter, maple syrup, and vanilla extract until smooth and creamy (about 30 seconds).
  3. Stir in the rolled oats, chia seeds (if using), and pinch of salt until evenly distributed.
  4. Divide the mixture evenly into two 16-ounce mason jars or airtight containers, leaving about an inch of space at the top.
  5. Seal the jars tightly and refrigerate for at least 6 hours, preferably overnight.
  6. In the morning, stir the oats well (chia seeds may have settled). If too thick, stir in a splash of milk. Add toppings like sliced banana, peanut butter drizzle, cinnamon, or chocolate chips. Serve cold or let sit at room temperature for 10 minutes.

Notes

Use room temperature ingredients to prevent peanut butter from seizing. Don’t skip the salt—it enhances the peanut butter flavor. The mixture should look slightly thinner than you think; it thickens overnight. Stir before eating to redistribute chia seeds and peanut butter. Store in the fridge for up to 4 days; do not freeze. Add toppings fresh just before serving.
