These quick and easy cranberry brie bites are made with frozen phyllo cups, creamy brie, and tangy cranberry sauce. Perfect for holiday parties or last-minute entertaining, they come together in just 5 minutes of prep and 10 minutes in the oven.

Ingredients

Scale
  • 2 boxes (15-count each) frozen phyllo cups
  • 8 ounces brie cheese, cold and cut into ½-inch cubes
  • ½ cup cranberry sauce (canned whole berry or homemade)
  • 2 sprigs fresh rosemary, finely chopped (optional)
  • Flaky sea salt (e.g., Maldon), for sprinkling
  • Honey, for drizzling (optional)
  • ¼ cup pecans or walnuts, finely chopped (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Arrange frozen phyllo cups on the prepared baking sheet, spacing them about 1 inch apart.
  3. Cut brie into ½-inch cubes, keeping the rind on. If too soft, freeze for 10 minutes first.
  4. Place one brie cube into each phyllo cup.
  5. Spoon about ½ teaspoon of cranberry sauce on top of each brie cube.
  6. If using, sprinkle a tiny pinch of fresh rosemary on top of each bite.
  7. Bake for 10-12 minutes, until phyllo cups are golden brown and brie is melted and bubbly.
  8. Remove from oven and let cool on the baking sheet for 2-3 minutes.
  9. Transfer bites to a serving platter using a small spatula or tongs.
  10. Sprinkle with flaky sea salt while still warm.
  11. If desired, drizzle with honey and sprinkle with chopped pecans or walnuts. Serve warm.

Notes

For best results, keep phyllo cups frozen until ready to use. Do not overbake; cups should be lightly golden. Let cool 2-3 minutes before serving to avoid burning. Can be assembled up to 2 hours ahead and refrigerated; add 2-3 minutes to bake time if cold. For gluten-free, use gluten-free phyllo cups.
