This easy copycat pumpkin cream cold brew is a quick and delicious way to enjoy a coffee shop favorite at home. Made with simple ingredients like pumpkin puree, heavy cream, and maple syrup, it comes together in under five minutes for a cozy, fall-inspired treat.

Ingredients

Scale
  • ½ cup cold heavy cream
  • 2 tablespoons pumpkin puree
  • 1 tablespoon maple syrup
  • ½ teaspoon vanilla extract
  • ¼ teaspoon pumpkin pie spice
  • Pinch of salt
  • 1 to 1½ cups cold brew coffee
  • Ice cubes
  • Optional: 1 teaspoon maple syrup or simple syrup for sweetening the cold brew

Instructions

  1. In a small bowl or jar, combine ½ cup cold heavy cream, 2 tablespoons pumpkin puree, 1 tablespoon maple syrup, ½ teaspoon vanilla extract, ¼ teaspoon pumpkin pie spice, and a pinch of salt. Whisk vigorously by hand for about 30 seconds, or use a milk frother for 10 to 15 seconds, until the mixture thickens slightly and becomes smooth and pourable.
  2. Fill a tall glass completely with ice cubes.
  3. Pour 1 to 1½ cups of cold brew coffee over the ice, filling the glass about three-quarters full. If desired, stir in 1 teaspoon of maple syrup or simple syrup.
  4. Slowly pour the pumpkin cream over the back of a spoon held just above the cold brew to create a layered effect.
  5. Sprinkle a tiny pinch of pumpkin pie spice or cinnamon on top for garnish, if desired.
  6. Serve immediately and enjoy.

Notes

For best results, use cold heavy cream with at least 36% milk fat. The pumpkin cream can be made up to 2 hours ahead and stored in the refrigerator; whisk or shake before using. If the cream sinks, it may be too thin—whisk longer or add more cream next time. For a dairy-free version, use full-fat coconut cream.
