  • ½ cup (113 g) unsalted butter, softened
  • ¾ cup (150 g) granulated sugar
  • ¼ cup (50 g) light brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups (250 g) all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon ground cloves (optional)
  • For the coating:
  • ¼ cup (50 g) granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Reduce the apple cider: Pour 1 cup apple cider into a small saucepan. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for 10-12 minutes, stirring occasionally, until reduced to about ¼ cup. Set aside to cool completely.
  2. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  3. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves. Set aside.
  4. In a large bowl, beat softened butter, granulated sugar, and brown sugar with an electric mixer on medium speed until light and fluffy, about 2-3 minutes. Scrape down sides as needed.
  5. Beat in egg and vanilla extract until well combined. Add cooled apple cider reduction and mix until smooth.
  6. Gradually add dry ingredients to wet mixture, mixing on low speed just until combined. Do not overmix. Dough will be soft and slightly sticky.
  7. In a small bowl, stir together ¼ cup granulated sugar and 1 tablespoon cinnamon for the coating.
  8. Using a 1.5-tablespoon cookie scoop, portion dough. Roll each portion into a ball, then roll in cinnamon-sugar mixture until fully coated. Place on prepared baking sheets, spacing 2 inches apart.
  9. Bake for 9-11 minutes, until edges are set and tops look slightly cracked. Centers will still look soft and puffy.
  10. Let cookies cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Don’t skip the apple cider reduction—it concentrates the flavor and prevents the dough from being too wet. Let the cider cool completely before adding to the butter mixture. For best results, measure flour by spooning and leveling. Cookies taste even better the next day.
