  • ½ cup heavy cream
  • ¼ cup whole milk

  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg (optional)
  • Pinch of salt
  • Reserved cream cheese icing packets (from cinnamon roll cans)
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon milk
  • ½ cup chopped pecans or walnuts (optional)
  • ¼ cup dried cranberries or raisins (optional)

Instructions

  1. Grease the slow cooker insert with cooking spray or melted butter.
  2. Open both cans of cinnamon rolls and set aside the icing packets. Cut each cinnamon roll into quarters using a sharp knife or kitchen shears.
  3. Scatter the cinnamon roll pieces evenly in the greased slow cooker insert.
  4. In a large mixing bowl, whisk together eggs, heavy cream, milk, melted butter, vanilla extract, cinnamon, nutmeg, and salt until smooth and slightly frothy (about 30 seconds).
  5. Slowly pour the custard mixture over the cinnamon roll pieces, pressing down gently with a spatula to help absorption.
  6. Cover the slow cooker insert with plastic wrap or a lid and refrigerate for at least 4 hours or overnight (optional but recommended).
  7. The next morning, place the insert in the slow cooker base. Cook on LOW for 2.5 to 3 hours, until edges are golden and center is set but slightly jiggly. For firmer texture, cook an additional 30 minutes.
  8. While the casserole cooks, make the glaze: squeeze reserved icing packets into a small bowl. Add softened cream cheese and milk, stirring until smooth. Adjust consistency with more milk or cream cheese as needed.
  9. Let the casserole rest for 5 minutes after cooking. Drizzle glaze generously over the top. Sprinkle with optional pecans or dried cranberries. Serve warm.

Notes

For best texture, refrigerate the assembled casserole overnight. Do not over-soak (max 12 hours). Use low heat only. Let rest 5 minutes before glazing. Line slow cooker with parchment paper for easy cleanup. Avoid lifting the lid during cooking.
