Ingredients

Scale
  • 4–5 fresh rosemary sprigs, washed and dried
  • 8 ounces brie cheese, softened to room temperature
  • 6 ounces aged cheddar, sliced into thin wedges
  • 4 ounces prosciutto, thinly sliced
  • 4 ounces Genoa salami, sliced
  • 1/2 cup mixed olives, pitted
  • 1/2 cup dried apricots
  • 2 tablespoons honey (optional, for drizzling)
  • 1 cup crackers or crostini
  • 1 cup fresh grapes (red or green)
  • 1/2 cup walnuts, toasted

Instructions

  1. Start with the cheese: Place the brie in the center of the board. Slice the cheddar into thin wedges and arrange them around the brie, leaving space between each piece.
  2. Add the meats: Fold the prosciutto slices into loose ribbons and place them in small clusters on the left side of the board. Roll the salami slices into cylinders or fold them in half and arrange them on the right side.
  3. Scatter the fruit: Arrange the grapes in small bunches around the board, filling in gaps. Place the dried apricots in a small bowl or scatter them near the cheddar.
  4. Add the crunch: Sprinkle the toasted walnuts in small piles between the cheese and meat.
  5. Place the olives: Put the olives in a small bowl and set it on the board.
  6. Incorporate the rosemary: Tuck fresh rosemary sprigs under the brie and around the edges of the board, ensuring they touch the cheese and meat slightly.
  7. Drizzle the honey: If using, drizzle a small amount of honey over the brie.
  8. Fill with crackers: Arrange crackers or crostini in small stacks around the board, leaving enough space for guests to reach them easily.
  9. Final touches: Step back and fill any empty spots with extra grapes, nuts, or small rosemary sprigs. The goal is a full, abundant look with no bare wood showing.

Notes

For best flavor, let the brie come to room temperature before serving. Toast the walnuts in a dry pan for 2-3 minutes to enhance their flavor. The board can be assembled up to 2 hours ahead and refrigerated; remove 20 minutes before serving. Leftovers: store cheese, meats, and crackers separately in airtight containers in the fridge. Cheese lasts up to 5 days, meats up to 2 days.
