Cozy Candy Corn Popcorn Bark with White Chocolate

A quick and easy fall treat made with popcorn, white chocolate, and candy corn. Perfect for Halloween parties, movie nights, or last-minute gatherings.

  • 8 cups popped popcorn (about 1/3 cup unpopped kernels or one standard bag of microwave popcorn)
  • 12 ounces white chocolate chips or melting wafers
  • 1 cup candy corn
  • 1 tablespoon coconut oil or vegetable oil (optional)
  • Flaky sea salt for sprinkling (optional)

Instructions

  1. Pop your popcorn according to package directions or your preferred method. Let it cool completely, then pick out any unpopped kernels. You should have about 8 cups of popped popcorn.
  2. Line a large baking sheet with parchment paper or a silicone baking mat.
  3. Place the white chocolate chips (or chopped white chocolate) in a microwave-safe bowl. If using oil, add it now. Microwave in 30-second intervals, stirring thoroughly after each, until smooth and glossy (about 1-2 minutes total). Do not overheat.
  4. Pour the melted white chocolate over the cooled popcorn in a large mixing bowl. Gently fold with a spatula until the popcorn is evenly coated.
  5. Sprinkle about 3/4 cup of the candy corn over the chocolate-coated popcorn and gently fold to distribute.
  6. Transfer the mixture to the prepared baking sheet and spread in an even layer, about 1/2 to 3/4 inch thick. Sprinkle the remaining 1/4 cup of candy corn on top, pressing gently. If using, sprinkle with flaky sea salt.
  7. Refrigerate for at least 30 minutes (or freeze for 15 minutes) until the white chocolate is completely firm.
  8. Lift the bark off the parchment paper and break into irregular pieces by hand or cut into squares with a sharp knife.

Notes

Let popcorn cool completely before adding chocolate to prevent clumping. Work quickly once chocolate is melted. For crunchiest bark, don’t skip refrigeration. Store in an airtight container at room temperature for up to 5 days or refrigerate for up to a week. Can be frozen for up to 3 months.
