  • 8 ounces cream cheese, softened
  • 1 cup cooked chicken, shredded
  • 1/2 cup buffalo hot sauce (e.g., Frank’s RedHot)
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese, divided
  • 1/4 cup crumbled blue cheese (optional)
  • Tortilla chips, for serving
  • Celery sticks, for serving
  • Carrot sticks, for serving
  • Crackers, for serving

Instructions

  1. Preheat your oven to 350°F (175°C). Let cream cheese sit out to soften, or microwave for 15 seconds if needed.
  2. Shred the cooked chicken using two forks until you have small, bite-sized pieces.
  3. In a mixing bowl, combine softened cream cheese, shredded chicken, buffalo hot sauce, ranch dressing, and half of the shredded cheddar cheese. Stir until well combined. If using blue cheese, fold it in now.
  4. Transfer the mixture to an 8×8 or 9×9 baking dish and spread into an even layer. Top with the remaining shredded cheddar cheese.
  5. Bake for 20-25 minutes, until the edges are bubbling and the cheese on top is melted and golden brown.
  6. Let the dip cool for about 5 minutes before serving. Serve warm with tortilla chips, celery sticks, carrot sticks, or crackers. Garnish with green onions or extra blue cheese if desired.

Notes

Let cream cheese soften to room temperature for a smoother dip. For less spice, reduce hot sauce to 1/4 cup and add extra ranch. For a smoky twist, add 1/2 teaspoon smoked paprika. Leftovers can be stored in the fridge for up to 4 days and reheated in the oven or microwave. The dip can also be assembled ahead and baked later, or cooked in a slow cooker on low for 2-3 hours.
