It’s the perfect Halloween appetizer that’s both delicious and adorable.

Ingredients

Scale
  • 6–8 mini sweet bell peppers (orange or yellow)
  • 2 cups cooked, shredded chicken
  • 8 oz cream cheese, softened
  • 1/2 cup buffalo wing sauce
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup crumbled blue cheese (optional)
  • 1/4 cup chopped green onions
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Wash and dry the mini bell peppers. Using a sharp paring knife, cut a small circle around the stem of each pepper, like carving a pumpkin top. Gently pull out the stem and seed pod. Remove remaining seeds and membranes.
  3. Carve small triangles for eyes and a jagged mouth on the front of each pepper.
  4. In a medium mixing bowl, combine softened cream cheese, buffalo wing sauce, ranch dressing, half of the shredded cheddar cheese, mozzarella cheese, garlic powder, and black pepper. Mix until smooth. Fold in shredded chicken and half of the chopped green onions.
  5. Fill each carved pepper with the buffalo chicken mixture. Place upright on prepared baking sheet.
  6. Sprinkle remaining shredded cheddar cheese over the tops.
  7. Bake for 15-20 minutes, until peppers are tender and cheese is melted and bubbly.
  8. Remove from oven and let cool for 2-3 minutes. Sprinkle remaining green onions and crumbled blue cheese (if using) over the top. Serve warm.

Notes

For best results, use room temperature cream cheese for a smooth filling. Don’t overstuff the peppers; leave a little room at the top. You can prep the peppers and filling a day in advance. For a vegetarian version, swap chicken for black beans or sautéed mushrooms. To keep peppers from tipping, nestle them together on the baking sheet or use a muffin tin.
