A comforting sweet potato casserole with a rich brown sugar glaze and crunchy pecan streusel, perfect for holiday gatherings or cozy cold-weather dinners.

Ingredients

Scale
  • 3 large sweet potatoes (about 2 pounds or 900g)
  • 1/2 cup (1 stick or 113g) unsalted butter, softened
  • 3/4 cup (150g) brown sugar, packed
  • 1/4 cup (60ml) heavy cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 2 large eggs, room temperature
  • 1 cup (100g) pecans, chopped
  • 1/2 cup (60g) all-purpose flour
  • 1/4 cup (20g) rolled oats

Instructions

  1. Preheat your oven to 375°F (190°C). Peel sweet potatoes and cut into 1-inch cubes.
  2. Boil the sweet potatoes: Place cubes in a large pot, cover with cold water by about an inch, add a generous pinch of salt. Bring to a boil, then reduce to medium-high and cook for 12-15 minutes until fork-tender.
  3. Drain and mash: Drain sweet potatoes well, return to pot or transfer to a large mixing bowl. Mash with a hand mixer or potato masher until smooth. Let cool for 5 minutes.
  4. Make the sweet potato base: Add 1/4 cup (half a stick) of the softened butter, 1/4 cup of the brown sugar, heavy cream, vanilla extract, cinnamon, nutmeg, salt, and eggs to the mashed sweet potatoes. Mix until well combined and smooth.
  5. Prepare the brown sugar glaze: In a small saucepan over medium heat, combine the remaining 1/4 cup butter and 1/2 cup brown sugar. Stir constantly until butter is melted and sugar is dissolved, about 2-3 minutes. Remove from heat.
  6. Make the pecan streusel: In a medium bowl, combine chopped pecans, flour, and rolled oats. Pour the warm brown sugar glaze over the dry ingredients and stir with a fork until everything is coated and crumbly.
  7. Assemble the casserole: Spread the sweet potato mixture evenly in a greased 9×13-inch baking dish. Sprinkle the pecan streusel evenly over the top.
  8. Bake: Place dish in preheated oven and bake for 25-30 minutes, until streusel is golden brown and edges are bubbly.
  9. Rest before serving: Let casserole sit for 5-10 minutes after baking before serving.

Notes

For a dairy-free version, use vegan butter and coconut cream instead of heavy cream. To make gluten-free, use a gluten-free flour blend and certified gluten-free oats. The casserole can be assembled a day ahead (without baking), covered, and refrigerated; add 10 minutes to baking time. Toast pecans before using for extra crunch.
