  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup (130g) semi-sweet or dark chocolate chips
  • ½ cup (60g) walnuts, chopped (divided)
  • 2 tablespoons brown sugar (for crumble)
  • ¼ teaspoon cinnamon (optional, for crumble)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper, letting some overhang for easy lifting later.
  2. Brown the butter: In a small saucepan over medium heat, melt ½ cup (115g) unsalted butter. Stir constantly as it melts and foams. When it turns golden brown and smells nutty (about 5-7 minutes), remove from heat and pour into a heatproof bowl to cool for about 10 minutes.
  3. Mix wet ingredients: In a large bowl, mash the bananas until smooth but still a bit chunky. Stir in the browned butter, granulated sugar, brown sugar, eggs, and vanilla extract until combined. Do not overbeat.
  4. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Fold dry into wet: Gradually add the dry ingredients to the wet banana mixture, folding gently with a spatula until just combined. Avoid overmixing.
  6. Add chocolate chips and walnuts: Fold in ¾ cup (130g) chocolate chips and ¼ cup (30g) chopped walnuts. Reserve the remaining ¼ cup walnuts for the crumble topping.
  7. Make the walnut crumble topping: In a small bowl, mix ¼ cup (30g) chopped walnuts with 2 tablespoons brown sugar and ¼ teaspoon cinnamon (if using). Sprinkle evenly over the batter in the loaf pan.
  8. Bake: Place the loaf pan in the oven and bake for 55-65 minutes. Insert a toothpick in the center; it should come out with a few moist crumbs but no wet batter. If the top browns too fast, loosely cover with foil after 40 minutes.
  9. Cool: Remove from oven and let the bread cool in the pan for 15 minutes. Then loosen the edges and transfer to a wire rack to cool completely before slicing.
