Cozy Apple Cider Mimosa with Cinnamon Sugar Rim

A crisp, bubbly fall cocktail made with chilled apple cider and Prosecco, finished with a warm cinnamon-sugar rim. This accidental creation is quick, easy, and perfect for autumn gatherings.

Ingredients

  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon (preferably Saigon cinnamon)
  • 1 tablespoon pure maple syrup
  • 4 ounces chilled apple cider (unfiltered preferred)
  • 2 ounces chilled Prosecco or Champagne (Brut or Extra Dry)
  • Ice cubes (optional)
  • 1/2 ounce bourbon or Calvados (optional)
  • 1 thin apple slice (Honeycrisp or Fuji)
  • 1 small cinnamon stick (optional)

Instructions

  1. Ensure champagne flutes or coupe glasses are clean and dry. If chilled, wipe away condensation.
  2. In a small shallow dish, combine 2 tablespoons granulated sugar and 1 teaspoon ground cinnamon. Whisk with a fork until evenly mixed.
  3. Pour 1 tablespoon maple syrup into another small shallow dish.
  4. Hold a glass upside down at a slight angle. Dip the rim into the maple syrup, rotating to coat about 1/4 inch. Let excess drip off for 5 seconds.
  5. Immediately dip the rim into the cinnamon sugar mixture, rotating to coat evenly. Lift straight up and tap gently to remove loose sugar. Place on a plate or paper towel to set for 30 seconds. Repeat for all glasses.
  6. If using ice, add it now.
  7. Pour 4 ounces chilled apple cider into the prepared glass, pouring slowly to avoid disturbing the sugar rim.
  8. Gently pour 2 ounces chilled Prosecco or Champagne down the side of the glass to preserve bubbles.
  9. If making the spiked version, add 1/2 ounce bourbon or Calvados. Stir very gently with a cocktail stirrer or cinnamon stick.
  10. Garnish with a thin apple slice (slit from edge to center and slide onto rim) and a cinnamon stick if desired. Serve immediately.

Notes

Chill glasses beforehand for best results. Rim glasses just before serving to keep sugar crisp. For a non-alcoholic version, swap Prosecco for sparkling apple cider or ginger ale. The maple syrup rim is key for texture and flavor; water works in a pinch but is less flavorful.
