A quick and nourishing chia pudding that comes together in just 5 minutes of active time. Creamy, lightly sweetened with maple syrup, and perfect for cozy mornings or meal prep.

Ingredients

Scale
  • 3 tablespoons chia seeds
  • 1 cup unsweetened almond milk
  • 1–2 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • Pinch of sea salt
  • Optional toppings: fresh berries, sliced banana, toasted coconut flakes, chopped nuts, or nut butter

Instructions

  1. In a jar or bowl, combine 3 tablespoons of chia seeds and a tiny pinch of sea salt. Stir to distribute the salt evenly.
  2. Add 1 cup of unsweetened almond milk, 1-2 tablespoons of maple syrup, and 1/2 teaspoon of vanilla extract. Do not stir yet.
  3. Whisk vigorously for about 30 seconds, ensuring no clumps of chia seeds remain. Let sit for 1 minute, then whisk again.
  4. Cover and let rest at room temperature for 5 minutes.
  5. After 5 minutes, uncover and stir again, scraping down the sides to incorporate any dry seeds.
  6. Cover and refrigerate for at least 2 hours, preferably overnight.
  7. Serve cold or at room temperature, topped with your favorite toppings.

Notes

For best texture, use room temperature milk. The pudding improves after 24 hours in the fridge. If too thick, stir in a splash of milk. If too thin, add another tablespoon of chia seeds and let sit for 30 minutes.
