A rich, tender beef stew made with just five ingredients in a slow cooker. This comforting dish features red wine, carrots, and beef stew meat for a deeply flavorful meal that tastes like it simmered all day.

Ingredients

Scale
  • 2 pounds beef stew meat, cut into 1-inch cubes
  • 1 (750 ml) bottle dry red wine (Cabernet Sauvignon or Merlot)
  • 4 cups low-sodium beef broth
  • 1 pound carrots, peeled and cut into 2-inch chunks
  • 3 tablespoons tomato paste
  • Salt and black pepper to taste
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water (optional, for thickening)
  • Fresh thyme or rosemary sprigs (optional, for garnish)

Instructions

  1. Pat the beef stew meat dry with paper towels. Season generously with salt and pepper.
  2. Place the carrot chunks in the bottom of the slow cooker. Add the seasoned beef on top.
  3. In a separate bowl or large measuring cup, whisk together the beef broth and tomato paste until smooth. Pour over the beef and carrots.
  4. Pour the red wine over everything. Do not stir.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is fork-tender.
  6. If desired, mix cornstarch with cold water to make a slurry. Stir into the stew and cook for an additional 20-30 minutes until thickened.
  7. Taste and adjust seasoning with salt and pepper as needed.
  8. Ladle into bowls and garnish with fresh thyme or rosemary if using. Serve with crusty bread.

Notes

For best results, use a dry red wine like Cabernet Sauvignon or Merlot. Avoid cooking wine. Pat the beef dry to prevent a watery stew. The stew tastes even better the next day. Freezes well for up to 3 months.
