A quick and comforting lasagna soup made in 30 minutes with ground beef, broken lasagna noodles, and creamy ricotta stirred into a rich tomato broth. Perfect for cozy nights when you need a hug in a bowl.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 pound ground beef (80/20 recommended)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 4 cups low-sodium chicken broth
  • 1 (15-ounce) can crushed tomatoes
  • 1 (15-ounce) can diced tomatoes, undrained
  • 2 tablespoons tomato paste
  • 8 ounces lasagna noodles, broken into 1–2 inch pieces
  • 1 cup whole milk ricotta cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook for 4-5 minutes until soft and translucent. Add minced garlic and cook for 30 seconds until fragrant.
  2. Add ground beef to the pot. Break it up with a wooden spoon and cook undisturbed for 2-3 minutes, then stir and break into smaller pieces. Cook until no longer pink, about 5-6 minutes. Season with salt, pepper, oregano, basil, and red pepper flakes (if using). Stir and cook for 1 minute.
  3. Add tomato paste and stir into the meat mixture. Cook for 1 minute. Pour in crushed tomatoes, diced tomatoes (with juices), and chicken broth. Stir well, scraping up any browned bits from the bottom.
  4. Increase heat to high and bring to a gentle boil. Reduce heat to medium-low and let simmer for 5 minutes. Taste and adjust seasoning.
  5. Stir in broken lasagna noodles, ensuring they are submerged. Cover and simmer for 10-12 minutes, stirring occasionally, until noodles are tender but not mushy. Check at 8 minutes.
  6. Remove pot from heat. Spoon ricotta into the soup and stir gently until mostly incorporated, leaving some creamy swirls.
  7. Ladle soup into bowls. Top with Parmesan cheese and fresh basil or parsley if desired. Serve immediately.

Notes

Don’t overcook the noodles; start checking at 8 minutes. Season in layers for best flavor. Let ricotta come to room temperature before adding to prevent lumps. For leftovers, the soup thickens as noodles absorb broth; add a splash of broth when reheating. Freeze soup base without noodles for up to 3 months.
