A cozy, homemade version of the popular fall coffee drink, featuring a concentrated apple cider reduction, warm spices, creamy oat milk, and espresso. Ready in 10 minutes, this easy recipe is perfect for crisp mornings or chilly afternoons.

Ingredients

Scale
  • 1 cup apple cider (unfiltered preferred)
  • 2 tablespoons light brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of ground cloves
  • Pinch of salt
  • 1 1/2 cups unsweetened oat milk (barista blend for hot, shelf-stable for iced)
  • 2 shots espresso (about 2 ounces, or 1/2 cup strongly brewed coffee)
  • 1 teaspoon vanilla extract
  • Ice (for iced version)
  • Optional: Caramel drizzle for garnish

Instructions

  1. Make the apple cider reduction: In a small saucepan, combine apple cider, brown sugar, cinnamon, nutmeg, cloves, and salt. Bring to a gentle simmer over medium heat. Cook for 8-10 minutes, stirring occasionally, until reduced by half and syrupy. Remove from heat and let cool slightly.
  2. Brew your espresso or strong coffee while the cider reduces.
  3. Prepare the oat milk: For iced version, pour oat milk into a jar with a tight-fitting lid, add vanilla extract, and shake vigorously for 20-30 seconds to create foam. For hot version, warm oat milk in a small saucepan over medium-low heat until steaming (about 150°F), then froth with a frother or whisk.
  4. Assemble the iced drink: Fill a glass with ice. Pour apple cider reduction over ice. Slowly pour oat milk over the back of a spoon to create a layer. Then carefully pour espresso over the back of a spoon to sit on top. Drizzle with caramel if desired.
  5. Assemble the hot drink: Pour apple cider reduction into the bottom of a mug. Add warm, frothed oat milk, then slowly pour espresso over the top. Sprinkle with cinnamon if desired.
  6. Stir well before drinking to combine layers.

Notes

Don’t skip the apple cider reduction—it concentrates the flavor and is key to the taste. For iced drinks, let espresso cool slightly before pouring to avoid melting ice. The reduction can be made ahead and stored in the fridge for up to a week. If oat milk curdles, let coffee cool 30-60 seconds before adding.
