  • 12 crisp apples (Honeycrisp or Granny Smith), sliced into thick wedges and tossed with lemon juice

  • Cornichons or gherkins

Instructions

  1. Make the Apple Cider Caramel Dip: In a medium saucepan over medium heat, combine apple cider and brown sugar. Whisk until sugar dissolves, then bring to a gentle simmer. Cook for about 5 minutes, stirring occasionally, until slightly reduced and syrupy. Add butter pieces and whisk until melted and smooth.   2. Prep the Board Components: Slice cheeses into bite-sized chunks or thin wedges. Slice apples into thick wedges and toss with lemon juice. Fold or roll meats into loose piles (tear prosciutto into pieces).
  3. Assemble the Board: Place the bowl of caramel dip centrally on a large cutting board or sheet pan. Arrange cheeses around it, spacing them out. Pile meats in small clusters. Fill gaps with crackers, apple wedges, grapes, olives, cornichons, and nuts. Place crackers near cheese and fruit near dip.
  4. Final Touches: Sprinkle flaky sea salt over the caramel dip just before serving. If serving outside, keep board in shade or bring out just before eating.

Notes

Caramel dip can be made up to a week ahead and stored in the fridge. Reheat gently with a splash of cream. For transport, assemble board on a sheet pan and cover tightly with plastic wrap; keep dip separate and add upon arrival. Use room temperature cream to prevent grainy caramel.
