This strawberry shortcake trifle for two is a quick, no-bake dessert that layers fresh strawberries, whipped cream, and pound cake for an impressive treat ready in just 10 minutes. Perfect for date night or small gatherings.

Ingredients

Scale
  • 1 pint fresh strawberries, hulled and sliced (about 2 cups sliced)
  • 2 tablespoons granulated sugar
  • 1 teaspoon fresh lemon juice
  • 1 cup heavy whipping cream, cold
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 store-bought pound cake or angel food cake (about 10–12 ounces)
  • Optional: 1 tablespoon strawberry jam or preserves
  • Fresh mint leaves for garnish (optional)
  • Extra sliced strawberries for garnish (optional)
  • Shaved white chocolate or powdered sugar for garnish (optional)

Instructions

  1. Prep the strawberries: Wash and hull the strawberries, then slice them into even pieces, about 1/4-inch thick. Place them in a medium bowl and sprinkle with the granulated sugar and lemon juice. Toss gently to coat. Let them sit for at least 10 minutes while you prepare the other components.
  2. Whip the cream: Pour the cold heavy cream into a large chilled bowl. Add the powdered sugar and vanilla extract. Beat with a hand mixer on medium-high speed until soft peaks form, about 2-3 minutes. Be careful not to over-whip.
  3. Prep the cake: Cut the pound cake or angel food cake into 1-inch cubes. If using the optional strawberry jam, spread a tiny bit on each cube.
  4. Layer the trifle: In each serving glass, start with a layer of cake cubes (about 1/3 of the cake per glass). Spoon a generous layer of macerated strawberries and their juice over the cake. Add a layer of whipped cream, spreading it gently to the edges. Repeat the layers: cake, strawberries, cream. Finish with a final dollop of cream on top.
  5. Garnish and serve: Top each trifle with a few fresh strawberry slices and a mint leaf if desired. Serve immediately or refrigerate for at least 30 minutes for best texture.

Notes

Don’t press the layers down. Let them sit naturally so the cream stays light and airy. If making ahead, assemble up to 4 hours in advance and refrigerate. For best texture, refrigerate for at least 30 minutes before serving. To make whipped cream more stable, add 1 tablespoon powdered milk or 1/2 teaspoon unflavored gelatin dissolved in 1 tablespoon water before whipping.
